E – EGG STEW

TRADITION

Egg stew is a popular Ghanaian dish that is easy to prepare and absolutely delicious. It is a versatile dish that can be eaten at any time of the day, and it can be paired with a variety of sides such as rice, bread or boiled yams. Eggs are an excellent source of high-quality protein, essential for muscle development, repair, and overall body maintenance. Including eggs in the stew contributes to meeting daily protein needs.



INGREDIENTS

4 eggs
3 medium sized tomatoes
2 onions
1 red bell pepper
1 green bell pepper
2 tablespoons of vegetable oil
Salt and pepper to taste


RECIPE

Step 1: Chop the onions, tomatoes and bell peppers into small pieces.
Step 2: Heat the vegetable oil in a pan over medium heat.
Step 3: Add the chopped onions to the pan and sauté until they become translucent.
Step 4: Add the chopped tomatoes and bell peppers to the pan and stir.
Step 5: Allow the mixture to cook for about 5 minutes or until the tomatoes and bell peppers have softened.
Step 6: Crack the eggs into the pan and stir until they are fully cooked.
Step 7: Season the stew with salt and pepper to taste.
Step 8: Remove the pan from the heat and serve the egg stew hot with your preferred side.
